This week's food is an original recipe. I call it: "Tasty Eggness." There are 3 primary ingredients: spinach, eggs, and taco seasoning. Bonus ingredients include: salsa and sour cream. It's super easy to make and you can eat it any time of day! Even if you don't think you like spinach, I dare you to try it. I didn't think I really liked spinach until a few weeks ago. It turns out, I actually do like spinach. I was being a semi-spinach hater for no reason! Here's the recipe:
Step 1: Spray a pan with non-stick spray. Throw in some spinach and wilt it for a few minutes on a medium/high heat. Add in a spoonful of taco seasoning.
Step 2: Mix up two eggs and an egg white (or however much would fit your personal fancy) in a bowl. Put the eggs in the pan with the spinach and scramble it all up.
Step 3: Serve it up with salsa and sour cream.
Final Product: Devour the deliciousness. This would also be very yummy served in a whole wheat tortilla wrap.

ReplyDeleteYes, ma'am that sounds good! I have a local farm I can get my fresh eggs (which I'm in love with) and cook them probably more than I should. I'll try this recipe :)
