More Spinach? Of Course!

It's time for another delicious recipe involving spinach! It is adapted from the cookbook 200 Under 200. Trust me; make it. It is amazingly low in calories and quite yummy. I need to learn some more adjectives to describe good food. I don't even like the word "yummy" but I don't know how else to convey how tasty it is! Moving right along...here's the recipe. Enjoy!

Cheesy Background Music (while you prepare the food):
"One Less Lonely Girl" by Justin Beiber (I became a fan of his after reading this article).

Ingredients:
1 small yellow onion
1 bag of spinach
1 can of mushrooms
1 big handful of mozzerella cheese
salt/pepper to taste

1. Preheat the oven to 350 degrees.
2. Chop a yellow onion into small pieces and fry it up in a tiny bit of olive oil on the stove on a medium-high heat. Continue cooking it until the onion pieces start to brown (about 5-7 minutes).
3. Open up a bag of spinach and mix it up in a bowl with the cooked onion.
4. Put a portion of the spinach/onion mixture on the bottom of a casserole pan.
5. Open a can of mushrooms. Add a layer of mushrooms on top of the spinach/onion layer.
6. Keep rotating layers until you are out of mushrooms and spinach.
7. Put a delicious layer of low-fat mozzerella cheese on top.
8. Bake at 350 degrees for about 20-25 minutes.
9. Eat it up! I think you will like it. I was skeptical. It is amazing. Like I said, it's really "yummy."
