Summer CSA Ratatouille



Every now and then, I become consumed with extreme affection for one specific food. Then all I want to do is eat that food all the live long day. Recently, my food of choice has been Nutella. It's not healthy. But it sure is tasty. Last week, it was Dairy Queen blizzards. Next week, it will likely be strawberry yogurt, but it's hard to say for certain.

As a way to break myself of the Nutella habit, I decided to invest some time into a food creation that would be something I could easily reheat all week. Something nutritious. Something with vitamins and minerals. Something that would take longer to eat than a spoonful of hazelnut spread.

Also, I needed to use up a lot of my CSA veggies.

The creation: Summer CSA Ratatouille. You could add all sorts of different veggies to your version. My version includes eggplant, summer squash, onions, tomatoes, and onions. You could also throw in a jalapeno if you wanted.  I thought about it but chickened out at the last minute.

"What is a ratatouille?" you may be asking.

I have no idea.

But it seemed like a good word to add to the recipe.

Enjoy! It's so easy. It takes awhile to cook, but it will be worth it! I'm looking forward to quickly warming up leftovers in the microwave in the days ahead!

Ingredients:
1 eggplant (diced)
2 tomatoes (diced)
3 summer squash (diced)
2 onions (diced)
1 small can of tomato sauce
1 tablespoon Tuscan or Italian seasoning

Directions:
-Locate a large sautee pan
-Cook onions until translucent in olive oil
-Add the rest of the veggies
-Add the tomato sauce and the seasoning
-Cover and let simmer on a low heat for an hour or so, stirring occasionally
