Carrot Projects

It's time for your daily carrot report.
Guess what?
Carrots don't come alone! They come with baggage!
Their baggage is in the form of a big green, leafy top!
I've been feeling a little sad about discarding the tops - especially since I know how much effort the little carrot goes through to grow! I hate to waste!

So I did some searching around, and sure enough - the green tops are edible!!!!
Yippee! If you happen to come across some, just be sure to wash them thoroughly.

This afternoon I made carrot top tea. It's currently chilling. I'll report back after I've had a few sips. I also made carrot top pesto! It's made with nuts, carrot greens, parsley, garlic, salt, olive oil, and Parmesan cheese. It's d-licious! Truly. I gobbled it right up.


Did you know that it takes about the same amount of time to boil carrots and pasta? It's true! So you may want to consider adding a few carrots to the mix the next time you make pasta. The carrots fit right in and they add a special treat.

Then I remembered that the sister of my landlord planted some baby rhubarb plants a few months ago in my front yard! I completely forgot! So you can imagine my EXTREME excitement when I remembered! I immediately ran right outside and clipped some rhubarb. The second I got near the plants, all I could think about was Grandma Verona. She made all kinds of tasty treats out of rhubarb. I wish she could see my garden. And I wish we could hang out and play piano and eat tomatoes.

I whipped up some tasty Strawberry Rhubarb Compote! I guess it's supposed to be good over ice cream. I'm going to try it on oatmeal tomorrow morning for my pre-churchy breakfast. Tomorrow I MIGHT try to make a rhubarb dessert, but I also might wait until Monday.

  1. looks fabby! i was wondering about the carrot tops. i have a big bag of them in my fridge actually. a friend gave them to me because i had juiced her some carrots and she thought maybe i could juice the carrot tops... maybe ;) hugs!!

  2. Melita! How fun! You can totally juice them; I read an article about that today. There are all kinds of uses. I guess you can even just throw them in a regular salad. They don't have much of a taste.
