It is CSA season and I'm back in the game! After a one year hiatus, Featherstone and I have reunited and oh-it-feels-so-good. Like they say, true love always comes back around, and getting a weekly box of organic vegetables is definitely pretty terrific.
One of my Lara Casey goals for this summer is to make good use of my CSA veggies each and every week. So far, so good (except I did accidentally wait too long to eat some basil and it went bad. SO SAD because I love bay*).
Today I want to share with you a 10-minute, 3-ingredient meal. I made this last night after getting home at 8:30PM. I wanted to tuck into bed with a bowl of tortilla chips. But, I told myself, "Emily, chips aren't dinner. Make dinner. Use your veggies."
3 Ingredients:
-Kale
-Smoked pork from the Fareway meat counter in the lunch meat area
-Miso paste
The recipe goes a little like this:
- Put a pan on the stove and turn on a medium heat.
- Put a little olive oil in the pan.
- Put a teaspoon or two of miso paste in the pan.
- Add 1/4 to 1/2 pound of smoked pork sliced into thin strips.
- When the pork starts getting a little crispy, add your kale!
- I used one big bunch. Sautee it for 5-10 minutes until the kale is nice and tender and covered in porky-deliciousness.
That's it! So tasty! The leftovers were great, too!
*A fun, alternative way of saying basil.
