Cookin it

Tomato season is upon us.
I love them, and here's a quick and easy way to enjoy them.
It is the perfect, filling, low-calorie snack.

-Tomato slices
-Plain rice cakes (although you could experiment with flavored)
-A triangle of Laughing Cow cheese (I used the plain cream cheese flavor)
-Taco seasoning mix (just a little sprinkle)

Health update:
The side effects of the infusions are really diminishing.  My platelet count is around 52,000 which means that the infusions did help.  I'll have another test next week to find out if the infusions were a short-term fix or a long-term.  Let's hope for long-term.  In the meantime, I don't have to think about platelets for the next 8 days!  Yahoo!  So I won't be mentioning them on here.  Just know that no news is good news.  I'm going to go back to feeling "normal" and talking about ANYTHING OTHER than blood.  :)
