"Another spinach recipe?" you ask. "Why of course!" I say. "I'm going to help you to love spinach!" Or, in this recipe, you could substitute the spinach with some other tasty veggies like zucchini or broccoli. Here's a delicious recipe for Spinach and Feta Quiche.

Ingredients:
1 bag of fresh spinach
6 oz. feta cheese
1/2 yellow onion, chopped
1 tomato, chopped
5 mushrooms, chopped
1 1/3 cups milk (or plain soy milk)
3 eggs
3/4 cup "Heart Healthy Bisquick"
salt and pepper, to taste

1. Preheat oven to 400 degrees. Steam the spinach in the microwave for a couple minutes until it shrinks WAY down. Spray a pie pan with non-stick spray. (*Here's where I messed up. I didn't have a pie pan so I used a casserole dish. It wasn't a total flop, but get a pie pan so that it cooks more evenly).

2. Mix up the milk, eggs, bisquick, salt and pepper.

3. Mix up the spinach, onion, tomato, and cheese in a separate bowl and place it in the bottom of the pie pan.

4. Pour the milk, eggs, bisquick mixture on top.

5. Bake at 400 degrees for about 40-45 minutes.
