
Day 23: These 30 days are flying by at such a rapid pace. Today has been filled with many tasty morsels of inspiration. I met with my learning partners, helped a friend do some cleaning, took a delightful walk with my pal Sarah, and cooked a REAL MEAL! This is something I rarely do.
I wanted to try out some recipes from my new cookbook purchased with a graduation present gift card (thanks Joy and Jake!). The name of the cookbook is Vegan Soul Kitchen by Bryant Terry. I made sweet potato fries with a peanut/ginger dipping sauce, wild rice, and collard greens with citrus and raisins. It all turned out pretty well. It was actually quite enjoyable to cook! Maybe I like cooking! But it would be about a bizillion times more wonderful to cook for multiple people on a regular basis; it gets a little cheesy cooking for myself. But, I can practice, practice, practice my vegan cooking skills!

And for some super exciting daily news: I have an interview with a congregation in Minnesota next week! I am so so so so so so so thankful to God. I know it's just a first interview, but it's movement in the right direction! Thanks everyone for your support, encouragement, and prayers.
